The Perfect Summer Dinner: Mango Lassi, Paneer Tikka and Kheer (Indian Recipes)

These Recipes are one of our favorites. They are simple, delicious and easy to make. Perfect for entertaining in the summers.


Mango Lassi is a yogurt smoothie perfect for warm nights. The drink is a version of the traditional Indian drink, Lassi, made with yogurt, water and salt and is popular in regions with hot temperatures. It also goes very well with spicy foods. It is a perfect drink to serve at barbecues or with Indian foods.

Mango Lassi With Cardamom


What you will need

(Serves 2)

1 cup peeled and chopped mango

Sugar to taste

Coconut powder

1 cup plain Greek yogurt (cold)

½ a cup of cold milk

Ground pistachio nuts to garnish


Put all the ingredients except the pistachios in the blender and blend for 2 minutes and serve. Sprinkle the pistachios



An Indian dish made from cottage cheese, Paneer tikka is the perfect vegetarian alternative to chicken tikka and other meat dishes.


What you will need

(Serves 2)

Bell Peppers, cut in 1 inch squares (the more colors you get, the better)

Oil as needed

Paneer (Cottage Cheese)

Chaat Masala (available from Indian spice stores)

Yogurt 1 cup

Ginger paste 1 tablespoon

Red chili powder 2 teaspoons

Turmeric powder 1 teaspoon

Garam Masala powder (available from Indian spice stores) 2 teaspoons

Fresh Cream 2-3 tablespoons

Lemon juice 1 tablespoon

Salt to taste


Cut the Paneer into one inch squares.

Mix the yogurt, ginger paste, red chili powder, turmeric powder, garam masala powder, cream, lemon juice and salt in a bowl until smooth.

Put in the Paneer squares and leave for 20 minutes. Take out the Paneer squares in a plate and keep the marinade

Heat oil in a pan and place the Paneer squares in. shallow fry them until they are golden. Take them out.

Mix the bell peppers in the remaining marinade. Fry them in the remaining out for two to three minutes.

Place the bell peppers and Paneer squares on a plate and sprinkle it with Chaat masala and serve hot.


Kheer is the oldest desert in the world, being made now for more than 2000 years. It is a traditional Indian rice pudding and is the perfect desert after a hot, spicy main dish.


What you will need

(Serves 2)

2 tablespoons of basmati rice

2 pints of whole milk

Sugar 4 tablespoons or to taste

Cardamom pods 2

Pistachios unsalted 10 chopped and some grounded for garnish


Pour the milk, rice, cardamom pods and sugar into a pan and bring it to a boil on slow heat, stirring it occasionally to prevent the milk from burning

Keep it on low heat and stir till the milk has boiled down to half and the rice has cooked. This may take up to an hour.

Add the pistachios and stir some more

Take it off the heat and let the mix cool down

Take out the cardamom pods

Put the mix in a blender and blend for a minute

Pour it out into a dish and refrigerate for an hour before serving

Garnish with ground pistachios

It is tradition to serve Kheer in earthen pots. You can easily find these in Indian shops.
