RECIPE FIX: Vegetable Fajitas

If you’re in the mood for a Mexican treat try this quick and delicious fajita recipe.

What you need (This recipe makes 5 wraps):

-1tbs vegetable oil
-1 medium onion chopped
-3 different colored bell peppers (red, green, orange, yellow) cut into strips
-1 can of kidney beans
-1 jar of salsa
– 1/4 tsp ginger and garlic paste
-1 tbs of red chili pepper flakes (if you want it extra spicy)
-fajita wraps
-sour cream
-grated cheddar cheese

Cooking directions:

Pour oil into a pan and fry the onions. Once they start browning add ginger and garlic paste and mix it well. Add the bell peppers and let the mix fry for 3 minutes. (Don’t forget to stir so the mix doesn’t stick to the bottom of the pan and burn.)

Add the kidney beans, salsa and chili pepper flakes and cook for 5 minutes.

While the mix is cooking, prepare the fajita wrap by grilling the wrap in a pan (should only take a minute to grill- don’t over do it, the softer the better).

Spread sour cream on the wrap and add the mix in the middle. Add cheese on top of the mix, wrap it up and enjoy!

*You can replace the vegetable ingredients to your liking, i.e. mushrooms, corn, chicken, etc…
